Vegetable Quiche

I like this lean and green meal because it is so versatile. You can use different types of cheeses such as Mexican, Cheddar, Monetary Jack, Mozzarella, etc. This time I used Mozzarella since I had so much of it on hand mainly because of the cauliflower pizza crusts. Yum Yum Yum! You can also change up the veggies as well. I used a combination of zucchini, broccoli and tomatoes but the original recipe used spinach, mushrooms, and zucchini. Try adding red or green peppers as well. The only problem I seem to have with this dish is that it is soooo hard to finish. I really need to split it and eat half in the afternoon and half for dinner because it is very filling. As we all know the egg beaters seems to feel like you are eating an all you can eat egg buffet! As for the condiments, again use whatever you like. I used salt, pepper and onion powder. Enjoy!


Vegetable Quiche

Ingredients:
1 cup egg beaters (1/2 leanest)
1/2 cup low moisture part skim 2 % mozzarella cheese (1/2 lean)
1/2 cup tomato, chopped (1 green)
1/2 cup broccoli, chopped (1 green)
1/2 cup zucchini, chopped (1 green)
1 original laughing cow cheese wedge  (1 healthy fat)
1 laughing cow cheese wedge ~ any flavor but not original (1 Condiment) 
1/4 tsp salt (1 condiment)
1/4 tsp pepper (1/2 condiment)
1/4 tsp onion powder (1/2 condiment)

Directions:
Preheat oven to 375. Spray a baking dish with Pam cooking spray. Mix ingredients all together in a bowl. Pour mixture into prepared pan. Bake 35 minutes.

Makes 1 Serving
Each serving provides:
1 Lean, 3 Greens, 3 Condiments and 1 Healthy Fat
* I recently updated this recipe to include the changes to light laughing cow cheese wedges. In the past, two light laughing cow cheese wedges was 1 Healthy Fat. Since the recent changes to their nutrition info, laughing cow cheese wedges now count as Condiments. Any flavor (light or regular) count as 1 Condiment per wedge. The only exception is the Original Swiss laughing cow cheese wedge which counts as 1 Healthy Fat for 1 wedge.
