I made this the other day and it was really good. This recipe is from Aimee aka Ladylyssa from Fan Girl's Diet. Check out her blog and follow her Medifast journey! You can also find her on My Medifast as well. I had to make a few adaptions to suit my taste and to keep my condiments down to two. I didn't even bother to spray the brownie container with Pam because it didn't stick much. If you want to use all your condiments, you could add Walden Farms Caramel Syrup to the top as well. Also, I only microwaved for 40 seconds to keep it from getting too dry. This is a very yummy breakfast treat. Thanks for a delicious recipe Aimee!
Pancake Cinnamon Buns
Slightly adapted from Aimee aka Ladylyssa from Fan Girl's Diet Blog
1 MF Pancake Mix (1 Meal)
1 packet Splenda (1 Condiment)
1/8 tsp Baking Powder (1/4 Condiment)
1/4 tsp Cinnamon (1/2 Condiment)
2 tbsp water
1/4 tsp Vanilla Extract (1/4 Condiment)
5 Sprays I Can't Believe It's Not Butter Spray (1/2 Healthy Fat)
Put all dry ingredients in a cereal bowl and mix thoroughly: Pancake, Splenda, banking powder, and cinnamon.
Put all wet ingredients in a teacup and mix thoroughly: water and vanilla
Pour wet ingredients into the dry ingredients and mix until wet. Will be the consistency of a cake or brownie batter. Try not to work the batter too much.
Spray a small microwavable bowl or mug with Pam. One of the Medifast Brownie dishes is good for this, too. Spoon the batter into the bowl/mug/dish, what-have-you, and dust the top with cinnamon.
Bake in the microwave for 50-60 seconds (I did it for 40 seconds). Pull out and spray the top with ICBINB spray. Eat and enjoy!
