The weekend is finally here at last! TGIF! Not too much going on this weekend but visiting family and catching up. I have always liked the weekends even when I don't have anything planned at all but today will be a busy one. With that being said, these burgers are perfect to make because they don't require a lot of time to prepare. You just throw a few ingredients together and grill! So simple! Sometimes what I like to do is buy a little over 3 lb package of ground turkey and that very same day I would divide my raw portions into 6 patties and make 3 different turkey burger recipes with two patties each recipe. Then I would wrap the patties individually in saran wrap and place in a freezer Ziploc bag. Of course, don't forget to label which patty is which! Then when I want a particular patty, I just take it out directly from the freezer and grill! Dinner in minutes!
I know this particular recipe is nothing fancy and you guys probably already know how to make it, but just in case you are a beginner in cooking and new to Medifast here is a really easy recipe. Definitely not gourmet, but tasty nonetheless. This recipe is really just the usual taco meat you make for taco salads, except it is made into a turkey burger patty with the addition of green and red peppers. I personally love taco meat so I wanted to try it as a patty instead. Personally, I usually decrease the meat to 3.75 oz, cooked and add shredded 2% reduced fat Mexican three cheese blend over the top, slightly melted. I am a cheese lover if you haven't already figured that out yet. I would eat this burger even when I am not on Medifast, but probably with a whole wheat bun and little bit of salsa on the top. Yum! I would love to add the salsa in this recipe but the condiments have already reached their limit for the day. If you do not mind going over your condiments, 1 tbsp of salsa is 1 condiment. If you really want it, you could always decrease the taco seasoning but not me. I love my meat to be perfectly spiced : ) Tomorrow is the last day of my turkey burger week. I will be sharing the A1 or BBQ (whichever you prefer) Stuffed Turkey Burger recipe which is my personal favorite. I hope you will stop by!
Mexican Fiesta Taco Turkey Burger
8 oz raw 85%-94% fat free ground turkey - yields 5 oz cooked (1 lean)
1/4 cup chopped green peppers (1/2 green)
1/4 cup chopped red peppers (1/2 green)
2 tsp low sodium taco seasoning mix (3 condiments)
1 tbsp water
dash of Worcestershire sauce
dash Tabasco sauce
Place turkey, green peppers, red peppers, taco seasoning mix, 1 tbsp water, Worcestershire sauce and Tabasco sauce into a mixing bowl. Mix until just combined. Form patties. Once all are formed, cook however you like to cook burgers. Grill (indoor or out), cook in hot skillet, or broil under broiler. Cook for 3-4 minutes per side or until an internal thermometer has reached 165 degrees.
*Note: If you would like to add 1 oz 2% reduced fat cheese such as Mexican Three Cheese blend 3-6g fat /oz to the top of your burger, decrease your raw meat to 7 oz so that it yields 3.75 oz cooked. You can also use one slice of 2% American Cheese that is 2.5 grams of fat in place of the Mexican Cheese.
1 Lean, 1 Green, and 3 Condiments
