Vegetable Quiche

It is my second week since recommitting myself to Medifast and I am down 3 more pounds this week. It feels good to be back in the swing of things. I know I can reach my goal weight by this summer. Perfect time to show some skin! I wanted to share this recipe I found on the recipe forum. It was posted as "Really good lean and green meal" and it was. I really enjoyed this tasty meal.

I like this lean and green meal because it is so versatile. You can use different types of cheeses such as Mexican, Cheddar, Monetary Jack, Mozzarella, etc. This time I used Mozzarella since I had so much of it on hand mainly because of the cauliflower pizza crusts. Yum Yum Yum! You can also change up the veggies as well. I used a combination of zucchini, broccoli and tomatoes but the original recipe used spinach, mushrooms, and zucchini. Try adding red or green peppers as well. The only problem I seem to have with this dish is that it is soooo hard to finish. I really need to split it and eat half in the afternoon and half for dinner because it is very filling. As we all know the egg beaters seems to feel like you are eating an all you can eat egg buffet! As for the condiments, again use whatever you like. I used salt, pepper and onion powder. Enjoy!
