Chocolate Peanut Butter Cup

This has got to be one of my favorite treats to have, especially late at night when I have my sweet tooth cravings. I love peanut butter and chocolate and this is a great substitute if you are craving Reeses Peanut Butter Cups. I have seen some people use Walden Farms Peanut Butter Spread instead of PB2. I am not sure if that is any better or not. It is definitely worth a try. I purchased PB2 at http://www.netrition.com/ for $3.95 + $4.95 flat rate shipping fee for whatever else you purchase which is not a bad price at all. It has 30 servings so it should last for awhile.

 It isn't as sweet as regular peanut butter, but you could add Splenda to sweeten it up. Personally, I left the Splenda out because with the hot cocoa or brownie it was sweet enough for me. In my opinion, it has to be completely frozen so I let it sit in the freezer for at least 2-3 hours. I tried it with both the hot cocoa and the brownie mix and I prefer the brownie mix. Soooo good! I got the idea of using brownie mix in place of the hot cocoa from Cheryl Colgan on the facebook Medifast page. Thanks for the idea! Enjoy!



Chocolate Peanut Butter Cup

Ingredients:
1 package Hot Cocoa or brownie mix (1 Meal)
2 tablespoon PB2 (1 Snack)
1 packet of Splenda (optional)

Directions:
Mix 2 tablespoon of PB2 and Splenda with 1 1/2 tablespoon of water (until creamy but not watery). Set aside. In another container, mix hot cocoa with 3 tablespoons of water. Spread half over the bottom of a ramekin or silicone baking cup. Spread PB2 over the chocolate bottom layer. Spread the rest of the hot cocoa mixture over the top of the PB2. Place in freezer for at least one hour.

Servings: 1 Meal, 1 Snack and 1 Condiment (if you used Splenda)
