Week one back on Medifast was a success! I lost 6.8 lbs! Yay! I still have 3.2 lbs to get back to the weight I had lost since recommitting myself to staying on plan. I hope to accomplish that task in the next week or two. With six months left before hubby comes home from deployment, I feel that is plenty of time to get to my goal weight which is about 35 lbs from now. Boy is he going to be surprised to see me at the weight when we first met over 9 years ago. Thank goodness for Yahoo messenger and Skype so that we can keep in contact with each other by video and instant message. We are so fortunate that we get to talk to each other daily and sometimes twice a day. I am not sure what I would do if I didn't have daily contact with him. I would go crazy! He tells me all the time that some of the soldiers in his company have not talked to their loved ones in weeks because they are in remote areas. My heart goes out to them. Please pray for their safe return home. Hubby knows I am on Medifast, but I don't tell him how much weight I have lost or am going to lose. He really can only see just my face on the web cam so hopefully it will be a surprise.


As for the recipe, I have made this recipe quite a few times already because I like it so much. I found it on the recipe board awhile ago and I am thankful whoever put it up there. I really hate the oatmeal and no matter what recipe I used to make it taste better (cookies, muffins, bread, etc), it still had the yucky chemical after taste. With this recipe, I don't taste it at all and it really does taste good. I have been trying to get rid of my oatmeal, but because I like this recipe so much, I may have to order more LOL. The only bad aspect about this recipe is that it uses all your condiments for the day and I usually like to save my condiments for my lean and green. Other than that, I love it.  Enjoy and again thanks for whoever created this yummy recipe.


Really Good Maple Pancakes

Ingredients:
1 MF Maple Brown Sugar Oatmeal (1 Fueling)
1/4 tsp baking powder (1/2 Condiment)
1 tablespoon egg beaters
1 packet Stevia (1 Condiment)
1/4 teaspoon cinnamon (1/2 Condiment)
1/4 cup water
2 tablespoons Walden Farms pancake syrup (1 Condiment) Optional

Directions:
Combine ingredients to form pancake batter. I actually used a little more water than 1just 1/4 cup because I thought the batter was too thick. Spray a non-stick skillet with Pam over medium-high heat. Pour pancake batter in pan. Brown on one side and then flip the pancake over to brown the other side.

I still have a lot of oatmeal left over from my sampler package and that is one the meals I just can not stand, especially blueberry oatmeal. Yuck! It tastes like chemical overload. So I went on the Medifast recipe board and found this recipe. It looked simple enough and only required 1 condiment so I gave it a try. I liked it so much better than eating it plain. Pretty tasty. This will help me get rid of my oatmeal in addition to making muffins and cookies. I used the maple and brown sugar oatmeal and placed the batter in a small oval ramekin and cut it into four sections. Enjoy!


Oatmeal Bars

Ingredients:
1 MF Oatmeal Packet (1 Fueling)
1 tbsp egg beaters
2 tbsp vanilla sugar free syrup (1 Condiment)
3 tbsp water

Directions:
Preheat oven to 350 degree. Stir ingredients together. Let sit 5 minutes. Pour into ramekin. Bake for 12 minutes or microwave for 1 minute in 1200 watt microwave. Cool. Cut into bars.

For my third week I lost 2 lbs. I am happy with it considering the week I had. I was in a horrible car accident this past Friday and I amazingly stayed on plan except for not drinking enough water. Yippee! The person who ran into my car apparently claimed she blacked out and ran a red light and smashed right into my car at an intersection. There is no more car. It was completely totalled. Thankfully I have no broken bones just pain in my neck, knee, and tummy. Well, I shouldn't say JUST, it hurts, it hurts a lot, but it will take time for me to be back to how I was. It is unfortunate we have to pay for others mistakes. It isn't fair not one bit, but that is life. She should not have been driving but life happens and I have to move on but I need to vent. What really sucks about it is that my hubby is coming home next Friday from Afghan for his leave and now he is going to see me all bruised up and in pain. That is not how I wanted him to see me because I do not want him to worry about me but to focus on himself over in the sand box. We have a cruise planned, theme parks we wanted to go to and a lot of other things we wanted to do while he is on his leave for 2 weeks, but I guess I will have to see what the doctor says. I am still so happy that I get to see him soon! That is what keeps me going and I can't wait until we see each other again. Counting the days... 9 days!

As for the recipe I tried... I got it from Cody's Blog New Beautiful Me. She has a lot of creative meals that I can't wait to try. Go check out her blog if you are on the Medifast Program. This one happened to be the one that was on top of my list. I love love love grilled cheese but I am not really fond of tomato soup. It was good but not something I will have often. I think I will try a different creamy soup to change up the taste, maybe cream of broccoli? If you love tomato soup then you will love this. I actually have a hard time getting all my lean down in one sitting so mixing my lean with my meal makes it easier for me to get it all in. Great idea Cody!


Grilled Cheese Tomato Sandwich
Slightly adapted from New Beautiful Me

Ingredients:
1 packet Medifast Cream of Tomato Soup (1 Fueling)
1/4 cup egg beaters (1/8 or .125 Lean)
1 slice 2% Reduced Fat American cheese (1/5 or .20 Lean)

Directions:
Mix soup and egg beaters together.
Pour evenly among the 4 squares of a sandwich maker. Cook for 3 minutes.
Fold in half and add cheese in the middle. Enjoy!
