I am loving these quick and easy slow cooker meals! This Slow Cooker Green Chile Chicken is creamy, flavorful, and incredibly easy to make. It comes together with just a handful of simple ingredients, but tastes like you spent hours in the kitchen.

I enjoyed this Slow Cooker Green Chile Chicken two different ways over the past couple of nights, and both were delicious! The first night, I served it in jicama wraps that I found in the produce section at Whole Foods Market. Two jicama wraps count as 1 Green.
The wraps are made from thinly sliced raw jicama and have a very mild flavor with a fresh, crisp texture. They make a wonderful low-carb alternative to traditional tortillas or taco shells and are sturdy enough to hold all of your favorite taco fillings.
The second night, I served the creamy Green Chile Chicken over cauliflower rice, and it was just as good! This recipe is so versatile, making it perfect for changing things up throughout the week. I’ll definitely be adding it to my regular meal rotation. I hope you enjoy it as much as I do!
- 2 lbs boneless, skinless, chicken breasts (4 Leaner)
- 2 (4 oz) cans chopped mild green chiles (2 Greens)
- 1 tsp garlic powder (2 Condiments)
- 1 tsp ground cumin (1 Condiment)
- 1 tsp chili powder (2 Condiments)
- 1/2 tsp salt (2 Condiments)
- 1/2 tsp black pepper (1 Condiment)
- 4 oz reduced fat cream cheese (4 Healthy Fats)
- 1/4 cup regular sour cream (4 Condiments)
- Place the chicken in the slow cooker.
- Cover the chicken with green chiles, garlic powder, cumin, chili powder, salt and pepper.
- Cover and cook on LOW for 4 1/2 hours.
- When done, use forks to shred the chicken and mix with the juices.
- Stir the cream cheese into chicken and continue cooking for 30 more min on LOW.
- Stir in sour cream until combined. Serve immediately.
