Oma's Cheesecake (made from cottage cheese)

This is a very easy cheesecake to make. You just need to combine all the ingredients in a blender, pour into a small dish and bake! Not to mention this recipe is low carb because it is made from cottage cheese. The original recipe does call for 1 1/2 tbsp of flour and it did have a graham cracker crust, but I had to leave them out so that it would be on plan. Not adding the flour may be why the cheesecake was not as smooth as I would like, but the taste was still yummy. This is a wonderful alternative to having a dessert as part of your lean or a way to get rid of your cottage cheese. It also tastes even better the next day when all the ingredients have really set together in the fridge! Enjoy!

Oma's Cheesecake (made from cottage cheese)
Slightly adapted from
1 cup 1% cottage cheese (2/3 Lean)
1 egg (1/3 Lean)
2 tsp lemon juice (1 Condiment)
1 tsp vanilla extract (1 Condiment)
3 packets splenda (3 Condiments)
1/8 tsp salt (1/2 Condiment)
Preheat oven to 325. Blend all ingredients in blender. Pour into 2 ramekins. Bake 50 to 60 minutes or until center is set.  Let cool completely.
 2 servings with 1/2 lean and 3 condiments per serving
