Oma's Cheesecake (made from cottage cheese)

This is a very easy cheesecake to make. You just need to combine all the ingredients in a blender, pour into a small dish and bake! Not to mention this recipe is low carb because it is made from cottage cheese. The original recipe does call for 1 1/2 tbsp of flour and it did have a graham cracker crust, but I had to leave them out so that it would be on plan. Not adding the flour may be why the cheesecake was not as smooth as I would like, but the taste was still yummy. This is a wonderful alternative to having a dessert as part of your lean or a way to get rid of your cottage cheese. It also tastes even better the next day when all the ingredients have really set together in the fridge! Enjoy!

Ingredients:
1 cup 1% cottage cheese (2/3 Lean)
1 egg (1/3 Lean)
2 tsp lemon juice (1 Condiment)
1 tsp vanilla extract (1 Condiment)
3 packets splenda (3 Condiments)
1/8 tsp salt (1/2 Condiment)
 
Directions:
Preheat oven to 325. Blend all ingredients in blender. Pour into 2 ramekins. Bake 50 to 60 minutes or until center is set.  Let cool completely.
 
 2 servings with 1/2 lean and 3 condiments per serving

  1. Yum! Do you think you could use egg beaters instead of the egg? If so, how much would I use?

  2. You can use egg beaters but 1 egg equals 1/4 cup of egg beaters.You would probably have to add mroe lean since 1 egg is 1/3 lean.

  3. Being a "semi-baker", I blended the ingredients in my magic bullet, made it very smooth. I also baked them in a water bath and they didn't crack. Were super yummy! I am thinking of exchanging the lemon juice for key lime juice next time!
