Chocolate Cake with Peanut Butter Filling or Cream Cheese Icing

I am still trying to catch up and get back to where I was before my week out of town visiting family. I had gained 8 lbs on that trip, but now I have lost about 5 lbs of it so almost 3 lbs left to go. That is why my weight loss ticker has stayed the same for awhile now because I never changed it to accommodate the gain. I will get there soon enough. That should teach me lesson to not go off plan for so long! We live and learn!

I was craving something chocolate and I remembered someone had mentioned the word "cake" on the Medifast Face book page. Mmmmmm cake! That person was Katie Mueller. She came up with the idea of using pancake mix, brownie mix and a peanut butter crunch bar. She microwaved the crunch bar for 20 seconds to soften it up. Mixed in the pancake mix, brownie mix and 5 tbsp of water. Then divided the batter between 3 brownie trays and microwaved for 2 minutes. That makes 3 meals. You can refrigerate or freeze them as well. Sounds good to me! I decided to try it as two meals with just the brownie and pancake mix and it still worked out well. I put some PB2 mixed with water in the center, and topped it with chocolate syrup. Boy was it delicious! For my second cake, I left out the PB2 and just topped it with cream cheese icing. It does take just like cake! Yum! Enjoy!

Chocolate Cake with Peanut Butter Filling or Cream Cheese Icing

Ingredients:
1 Chocolate Chip Pancake (1 Meal)
1 Brownie mix (1 Meal)
1/4 cup plus 2 tbsp water
2 tbsp PB2 (1 Snack)
or
2 tbsp Peanut Butter (2 Snacks)
2 tbsp Walden Farms Chocolate Syrup (1 Condiment)

Directions:
If using PB2, mix 2 tbsp PB2 with about 1 tbsp water to get desired consistency. Set aside.
Combine pancake mix and brownie mix with 1/4 cup plus 2 tbsp water. Place 1/4 of batter (or 1 heaping tbsp) in two separate brownie containers or muffin pan. Place half of the PB2 or half of the peanut butter in the centers of each brownie container. Pour 1/4 of batter over each brownie container to cover peanut butter. Bake 350 degrees for 15 minutes or until done or microwave for 2 minutes or until done (microwave times will vary so keep an eye on it). Drizzle with 1 tbsp chocolate syrup over each cake. Enjoy!

2 Servings with 1 Meal, 1/2 Snack with PB2 or 1 Snack with Peanut Butter and 1/2 Condiment per serving

* Variation: Instead of PB2 or Peanut Butter: Combine 2 tbsp light cream cheese and 1 packet of splenda. Divide icing between the two cakes and spread on top. This will count as 1 1/2 Condiments per serving.
