Grilled Chicken with Summer Squash Relish

Oh yeah! It's my birthday! Oh yeah! It's my birthday! Okay, it is not my birthday, but it feels like it is because the scale has given me a wonderful gift today... a lower weight than last week! Finally! It took one week to lose the 5 lbs I gained from 3 days of binging. It is so not worth it because I wasted one entire week! Lesson learned! I hope everyone will have a terrific weekend! It is a beautiful day here in FL. It isn't too hot or too cold and I can hear the birds singing out my window. A wonderful day to go outside and just enjoy it but first I want to share a recipe with you. I am not sure where you are located but here in FL it is a great time to grill! I love grilled meats so I decided to try this recipe.

This recipe came from one of my South Beach Diet Cook Books called The South Beach Diet Super Quick Cook Book. I realized that a lot of the phase 1 recipes of the South Beach diet are within Medifast guidelines with a little bit of tweaking of the condiments and a few other ingredients. This recipe uses a spice I never tried before, coriander. I didn't realize it was just cilantro ground up until recently. Now I love this spice. It gives the chicken a great Mexican flavor along with the ground cumin. It isn't really spicy but it had just enough flavor. I could just eat the grilled chicken alone without the summer squash relish, but the relish adds something special to the chicken. While the chicken has a nice spiced seasoned flavor, the relish has a fresh crunch with a subtle hint of lemon and olive oil. The original recipe called for the addition of chopped red onion in the summer squash relish, but I am not fond of raw onions so I left it out. Personally, I like it without the onion. : ) You will still need to add 1 cup of veggies per serving if you choose not to have the cauliflower "rice". I am just addicted to the "rice" and it is a veggie that I do not have to add any additional spices or seasonings to make it taste good when serving when my main dishes. Also, you could use the broiler or George Foreman Grill as well for all of you who are stuck inside! The photo below is of two chicken breasts even though it looks like only one since the squash relish is on top. I had to get my 6 oz of lean in! : ) Enjoy!


Grilled Chicken with Summer Squash Relish
Served on a Bed of Cauliflower "Rice"
Slightly adapted from The South Beach Diet Super Quick Cook Book

Ingredients:
For the Chicken:
1/2 tsp ground coriander (1 Condiment)
1/2 tsp ground cumin (1/2 Condiment)
1/4 tsp salt (1 Condiment)
1/4 tsp ground ginger (1/2 Condiment)
1/8 tsp ground black pepper (1/4 Condiment)
18 oz raw boneless, skinless chicken breasts - yields 12 oz cooked (2 Lean)

For the Summer Squash Relish:
1/2 cup yellow squash, diced (1 Green)
1/2 cup zucchini, diced (1 Green)
2 tbsp fresh parsley leaves, chopped (1/2 Condiment)
2 tsp lemon juice (1 Condiment)
 1/8 tsp Salt or to taste (1/2 Condiment)
1/8 tsp pepper (1/4 Condiment)
2 tsp extra virgin olive oil (2 Healthy Fats)

For the Cauliflower "Rice":
2 cups cauliflower, cooked and grated (4 Greens)

Directions:
Heat a grill to medium. Lightly oil the grill grates.
Meanwhile, in a small bowl combine the coriander, cumin,  1/4 tsp salt, ginger and pepper. Rub the spice mixture over chicken breasts. Grill the chicken, turning it over halfway through cooking about 10 to 15 minutes each side. If grilling outdoors isn't an option, you can broil the chicken 4 inches from the heat for the same amount of time. Set aside and let cool slightly.
In a medium bowl, toss together the yellow squash, zucchini, onion, parsley, lemon juice, oil, 1/8 tsp salt or to taste, and pepper until well combined.
Serve the chicken warm or at room temperature with the squash relish.

2 Servings: Each serving has 1 Complete Lean and Green with 3 Condiments and 1 Healthy Fat
