Shake Cake

Here is how my Medifast shake cake turned out. I used a strawberry shake packet and added cream cheese icing to the top. This was more dense and spongy rather than light and fluffy. Shake cakes are a great way to use up the shakes if you do not feel like drinking your shake. They are also great for an on the go meal. I prefer mine baked in the oven. For the cake in the photo, I used a small bundt cake pan, flipped the cake upside down, and then added the icing. Enjoy!


Shake Cake

Ingredients:
1 Shake packet (1 Fueling)
1/4 tsp baking powder (1/2 Condiment)
2 tbsp egg beaters or egg whites (2/3 Condiment)
2 tbsp water

Optional
1 tbsp reduced fat cream cheese (1 Condiment)
1/2 packet Stevia (1/2 Condiment)
or
2 tbsp Reddi-Whip Whipped Topping (1 Condiment)

Directions:
Preheat oven to 350. Mix dry ingredients then add wet ingredients. Bake in a ramekin or muffin cup for 15 minutes. Set aside and let cool. Add any additional toppings such as cream cheese and Stevia or whipped topping. Enjoy!
