Here is how my medifast shake cake turned out. I used a strawberry shake packet and added cream cheese icing to the top. It doesn't taste like the light fluffy cake that you would normally think of when eating cake. It was more dense and spongy. It was okay, but adding the cream cheese icing made it better. Shake cakes are a great way to use up the shakes if you do not feel like drinking your shake. They are also great for an on the go meal. I prefer mine baked in the oven. I just havn't had any success with the microwave and shake cakes, but then again I only tried it once using a Chai Latte drink packet and it spilled all over the container and hardened up over the sides. Now I only use the oven when making these. Others, use the microwave with no problem and nuke it for 90 seconds. For the cake in the photo, I used a small bundt cake pan but not the tunnel ones, flipped the cake upside down, and then added the icing. I just wanted a different look :) Enjoy!



Shake Cake

Ingredients:
1 Shake packet (1 Meal)
1/4 tsp baking powder (0.5 Condiment)
2 tbsp egg beaters
2 tbsp water

Optional
1 tbsp reduced fat cream cheese (1 Condiment)
1/2 packet Splenda (0.5 Condiment)

Directions:
Preheat oven to 350. Mix dry ingredients then add wet ingredients. Bake in a ramekin or muffin cup for 15 minutes. Set aside and let cool. Combine cream cheese and splenda. Spread on cake. Enjoy!
1 Meal and 1/2 Condiment (2 Condiments with Cream Cheese Icing)
