Broccoli Chicken Dijon

I haven't been updating my blog lately because I have once again fell off the diet train and could not meet my weight loss goals with Weight Watchers. I re-gained the weight I had lost from Weight Watchers bringing me back to 178 lbs. Recently, I decided to try a new diet called Medifast which I have been on for the past week. So far I have lost 6 pounds! Yay! I have never heard of Medifast before but was introduced to it by physician. I thought why not give it a try. What do I have to lose but pounds right? Well, the diet is simple enough. You have five portioned controlled meals which could consist of their many shakes, bars, soups, puddings, brownies, oatmeals, pancakes, soft serves, cold drinks, hot drinks, scrambled eggs, and snacks. There is a lot to choose from and so far the food really isn't bad at all, except for the oatmeal  : ). I actually love some of the food. The sixth meal of the day is called a lean and green meal. It consists of 5 to 7 oz of lean protein and 3 servings of veggies. Basically you are eating every two to three hours. Also, with the holidays fast approaching and family and friends visiting, I will have some recipes that aren't so healthy, but so delicious. In my opinion, Medifast is not a lifestyle change like Weight Watchers so I won't be doing Medifast recipes forever. But their diet is almost fool proof if you can follow their plan. The only thing I can see that may deter me from this plan is if I get tired of eating their food. Eventually, I will switch back to just lighter recipes but for now I am going to give this a try. Broccoli Chicken Dijon
Medifast Lean and Green Meal Cook Book

18 oz chicken breasts (boneless skinless) cut into strips - should yield 12 oz cooked (2 Leaner Leans)
1/4 cup reduced sodium chicken broth (0.25 Condiments)
1 tbsp light soy sauce (1 Condiments)
3 cups broccoli florets (6 Greens)
1 clove garlic, minced (1 Condiment)
2 teaspoons olive oil (2 Healthy Fats)
1 tablespoons Dijon mustard (3 Condiments)

In a bowl, coat chicken with soy sauce; set aside. (For increased flavor, marinate 30 minutes.)
Saute broccoli, garlic and 1 teaspoon olive oil over medium heat until lightly browned. Remove from skillet and cover to keep warm. add remaining olive oil to skillet. Stir-fry chicken 4 to 7 minutes or until cooked throough. Add chicken broth and bring to a boil. Reduce heat to medium-low, then stir in mustard until blended. Return sauteed broccoli to skillet. Mix until heated through, stirring occasionally. Divide into two plates and serve.
