Really Good Maple Pancakes

Week one back on Medifast was a success! I lost 6.8 lbs! Yay! I still have 3.2 lbs to get back to the weight I had lost since recommitting myself to staying on plan. I hope to accomplish that task in the next week or two. With six months left before hubby comes home from deployment, I feel that is plenty of time to get to my goal weight which is about 35 lbs from now. Boy is he going to be surprised to see me at the weight when we first met over 9 years ago. Thank goodness for Yahoo messenger and Skype so that we can keep in contact with each other by video and instant message. We are so fortunate that we get to talk to each other daily and sometimes twice a day. I am not sure what I would do if I didn't have daily contact with him. I would go crazy! He tells me all the time that some of the soldiers in his company have not talked to their loved ones in weeks because they are in remote areas. My heart goes out to them. Please pray for their safe return home. Hubby knows I am on Medifast, but I don't tell him how much weight I have lost or am going to lose. He really can only see just my face on the web cam so hopefully it will be a surprise.


As for the recipe, I have made this recipe quite a few times already because I like it so much. I found it on the recipe board awhile ago and I am thankful whoever put it up there. I really hate the oatmeal and no matter what recipe I used to make it taste better (cookies, muffins, bread, etc), it still had the yucky chemical after taste. With this recipe, I don't taste it at all and it really does taste good. I have been trying to get rid of my oatmeal, but because I like this recipe so much, I may have to order more LOL. The only bad aspect about this recipe is that it uses all your condiments for the day and I usually like to save my condiments for my lean and green. Other than that, I love it.  Enjoy and again thanks for whoever created this yummy recipe.


Really Good Maple Pancakes

Ingredients:
1 MF Maple Brown Sugar Oatmeal (1 Fueling)
1/4 tsp baking powder (1/2 Condiment)
1 tablespoon egg beaters
1 packet Stevia (1 Condiment)
1/4 teaspoon cinnamon (1/2 Condiment)
1/4 cup water
2 tablespoons Walden Farms pancake syrup (1 Condiment) Optional

Directions:
Combine ingredients to form pancake batter. I actually used a little more water than 1just 1/4 cup because I thought the batter was too thick. Spray a non-stick skillet with Pam over medium-high heat. Pour pancake batter in pan. Brown on one side and then flip the pancake over to brown the other side.
