Not much going on today, but I wanted to share this recipe. This is one of my favorite ways to eat the pancakes whether it be the plain or the chocolate chip pancake mix. The cream cheese icing is what makes this so yummy. I love cream cheese icing, although the icing itself uses up 2 condiments, but it is so worth it! Enjoy this easy recipe!


Cinnamon Roll with Cream Cheese Icing

Ingredients:
1 pancake mix (1 Fueling)
2 tbsp water
1/8 tsp cinnamon (1/4 Condiment)
1 tbsp light cream cheese (1 Condiment)
1 packet Stevia, divided (1 Condiment)
Few sprays of I Can't Believe It's Not Butter Spray (if you have a healthy fat to use up, you can have 10 sprays as 1 Healthy Fat)

Directions:
Combine pancake mix, cinnamon, half packet of Stevia, and water. Pour into a small container. Microwave for 50 seconds. Make sure you do not overcook it otherwise it will get dry. Spray the pancake with ICBINB spray. In the same bowl you used to make the pancake batter, combine cream cheese and the rest of the splenda. Mix around with the little bit of batter that was left in the bowl. This adds a bit of the cinnamon mixture into the cream cheese. Spread on pancake.

1 Fueling, 2.25 Condiments and 1 Healthy Fat if you used the Butter Spray



Walden Farms Chocolate Syrup on top makes it even sweeter!

Chocolate Cake with Peanut Butter Filling or Cream Cheese Icing

Ingredients:
1 Chocolate Chip Pancake (1 Fueling)
1 Brownie mix (1 Fueling)
1/4 cup plus 2 tbsp water
2 tbsp PB2 (1 Snack)
2 tbsp Walden Farms Chocolate Syrup (1 Condiment)

Directions:
Mix 2 tbsp PB2 with about 1 tbsp water to get desired consistency. Set aside.
Combine pancake mix and brownie mix with 1/4 cup plus 2 tbsp water. Place 1/4 of batter (or 1 heaping tbsp) in two separate brownie containers or muffin pan. Place half of the PB2 or half of the peanut butter in the centers of each brownie container. Pour 1/4 of batter over each brownie container to cover peanut butter. Bake 350 degrees for 15 minutes or until done or microwave for 2 minutes or until done (microwave times will vary so keep an eye on it). Drizzle with 1 tbsp chocolate syrup over each cake. Enjoy!

2 Servings with 1 Fueling, 1/2 Snack with PB2, and 1/2 Condiment per serving

* Instead of PB2: Combine 2 tbsp light cream cheese and 1 packet of Stevia. Divide icing between the two cakes and spread on top. This will count as 1 1/2 Condiments per serving.






Pancake Cinnamon Buns

Ingredients:
1 MF Pancake Mix (1 Fueling)
1 packet Stevia (1 Condiment)
1/8 tsp Baking Powder (1/4 Condiment)
1/4 tsp Cinnamon (1/2 Condiment)
2 tbsp water
1/4 tsp Vanilla Extract (1/4 Condiment)
5 Sprays I Can't Believe It's Not Butter Spray (1/2 Healthy Fat)

Directions:
Put all ingredients in a small bowl except ICBINB spray. Mix gently.
Try not to work the batter too much.
Spray a small microwavable bowl or mug with Pam. One of the Medifast Brownie dishes is good for this, too. Spoon the batter into the bowl/mug/dish, and dust the top with cinnamon.
Microwave for 40 seconds. Pull out and spray the top with ICBINB spray. Eat and enjoy!

1 Meal, 2 Condiments and 1/2 Healthy Fat


It is a beautiful Sunday morning here and I wanted to make some type of muffins to enjoy outside. This was created by Medifast member, Oikouros on the recipe forums, but she made it into one larger cake in the microwave. Call me old fashioned, but most of the time I like to make my baked goods in the oven except for the brownies. You can make this as a single cake, regular sized muffins, or mini muffins. I just chose to have mini muffins because they are so cute! These were perfect little nibblers that satisfied my craving for a little chocolate. The combination of coffee and chocolate chips make these very tasty. It sank a little in the middle unlike other muffin recipes, but this was fine by me because I wanted to top it with a little cream cheese icing. The icing makes it better if I do say so myself. It doesn't even require much... just a dab will do on each little muffin. I have already eaten it with, without the icing as well as with only cream cheese on top without the addition of splenda in the icing. It is good all three ways, but you have to try the icing with it at least once! You will love it so much more! This would also work great with Hot Cocoa instead of the Cappuccino if you want more of a chocolate flavor. Enjoy!


Chocolate Chip Coffee Cake Muffins

Ingredients:
1 packet MF Cappuccino (1 Fueling)
1 packet MF Chocolate Chip Pancakes (1 Fueling)
1 packet of Stevia (1 Condiment)
1 tbsp Egg Beaters
1/4 tsp baking powder (1/2 Condiment)
1/4 cup Water

Cream Cheese Frosting
2 tbsp light cream cheese - Optional (2 Condiments)
1/2 packet Stevia - Optional (1/2 Condiment)

Directions:
Mix ingredients together. Pour into a 4 inch round or square plastic microwavable dish that has been sprayed with Pam. Microwave on high for 1 min. 45 sec - 2 min, checking for consistency. Eat immediately.
I made them into eight mini muffins and baked them for 15 minutes at 350 degrees.

2 Fuelings and 2 Condiments per Meal



Here are three options when making crepes using pancake mix. My personal favorite is chocolate chip pancakes because I love chocolate! Thank goodness Medifast has plenty f products with chocolate in it otherwise I think I would already be off plan! The first crepe is my personal favorite. The filling is actually from the South Beach Diet Phase 1 plan. I used to love the different variations of ricotta creme. I would always have it as an evening dessert so I thought this would be really nice in a crepe. It makes an elegant dessert or breakfast. Try using different extracts such as lemon or almond extract to vary the flavors. You could even try using Torani or Da vinci sugar free syrups to change up the flavors. I just thought vanilla would go great with the new Walden Farms Chocolate Syrup I picked up today. Vanilla goes with everything! The chocolate syrup is so delicious. I may be in trouble putting chocolate on everything now LOL. Well, almost everything! I have the caramel syrup as well and I think I like the chocolate one a tad bit better. They are both great to have to mix it your meals such as the puddings, brownies, shakes, etc. My local grocery store sells them a lot cheaper than the Walden Farms website so I buy them there.The original recipe yields a 1/2 cup mixture so I cut all the ingredients in half. If you want the ricotta creme sweeter, you can add the full packet of Splenda, but I am greedy with my condiments on the meals and I thought 1/2 a packet was good enough for me with the sweetness of the chocolate syrup. I like to save my condiments for my lean and green meals because I know that chicken breast needs some help LOL. This would be great to have if you are having egg beaters for your lean and green meal that day. Those egg beaters are difficult for me to get all down! If you use egg beaters then you can have 1 1/2 cups to complete your lean that day. That is still alot of egg beaters!  Anyways, this is a really yummy dessert so give it a try!


#1) Vanilla Ricotta Creme Crepes with Chocolate Sauce

Ingredients:
Chocolate Chip Pancake (1 Fueling)
Little more than 1/4 cup water
1/4 cup part skim ricotta cheese 2-3 grams fat/oz (1/4 Lean)
1/2 packet Stevia (1/2 Condiment)
1/8 tsp vanilla extract (1/8 Condiment)
1 tbsp Walden Farms Chocolate Syrup (1/2 Condiment)

Directions:
Combine chocolate chip pancake mix with water. The consistency should be a little thinner than pancake batter. Spray non-stick skillet with cooking spray. Pour batter into pan and cook until done. Set aside.
Combine ricotta cheese, Stevia, and vanilla extract until blended. Put mixture inside crepe. Drizzle 1 tbsp chocolate syrup over the top.

1 Fueling with 1.12 Condiments and 1/4 Lean




The second one I made is basically the same recipe for the crepe, but different filling. If you like cream cheese, you will like this one. The fruit spread I used was grape, but my personal favorite from Walden Farms is strawberry. If you don't have fruit spread, use a 1/2 packet of Stevia for some added sweetness. It is still very good. You may not even want to microwave the cream cheese and fruit spread together, but I find it easier to spread when it is nice and soft. Voila! Breakfast is served! This is my second favorite crepe.


#2) Chocolate Chip Crepes with Cream Cheese Filling

Ingredients:
Chocolate Chip Pancake (1 Fueling)
A little more than 1/4 cup water
1 tbsp light cream cheese (1 Condiment)
1 tbsp Walden Farms fruit spread (1 Condiment)
or
1/2 packet Stevia (1/2 Condiment)

Directions:
Combine chocolate chip pancake mix with water. The consistency should be a little thinner than pancake batter. Spray non-stick skillet with cooking spray. Pour batter into pan and cook until done. Set aside.
Combine cream cheese and fruit spread or Stevia until semi blended. Microwave for 15 seconds and stir until completely mixed. Put mixture inside crepe.

1 Fueling and 2 Condiments for fruit spread and cream cheese
or
1 Fueling and 1 1/2 Condiments for Stevia and cream cheese

This is the third variation of what to put inside your pancake crepes. You can use any pudding you like whether it be banana, chocolate, or vanilla. I am trying to get rid of my vanilla pudding so I decided to put some PB2 in it. It tastes kind of like butterscotch. One other Medifast member called it Butterfingers pudding which it does kind of taste like it. Hmmm, maybe I should have added chocolate syrup so it would be like the candy bar! Another great reason for me to use my chocolate syrup! This counts as 2 meals, but you really aren't going to eat both meals at the same time because you will have some pudding left for later. Turned out tasty and did not even require many condiments! So which one is your favorite?


#3) Butterscotch Crepes with Caramel Sauce

Ingredients:
Pancake Mix (1 Fueling)
A little more than 1/4 cup water
Vanilla Pudding (1 Fueling)
1/2 cup water
1 tbsp PB2 (1/2 Snack)
1 tbsp Walden Farms Caramel Syrup (1/2 Condiment)

Directions:
Combine pudding with 1/2 cup water and 1 tbsp PB2. Whisk until blended. Chill in the refrigerator for 30 minutes.
Combine pancake mix with water. The consistency should be a little thinner than pancake batter. Spray non-stick skillet with cooking spray. Pour batter into pan and cook until done. Set aside.
Spread 2-3 tbsp of  pudding in crepe and reserve the rest of the pudding for later. Drizzle 1 tbsp caramel syrup over the top.

2 Fuelings, 1/2 Condiment and 1/2 Snack


Are you craving any bread yet? Well, probably not if you are 100% OP, but if you want the taste of bread, try using pancake mix (original or chocolate chip). I love to make these pancake muffins or bread and eat them with Walden Farms fruit spread or light cream cheese for a quick meal on the go. Or you can always try Cody Jo's Breakfast Sandwich Heaven with a morning star sausage patty, egg beaters and cheese! Delicious! Those suckers are an awesome substitute if you are missing Mickey D's Egg and Sausage Biscuit. Maybe you would be interested in nice crunchy toasts? This was a suggestion from Medifast member Wawa18. You just make the batter as directed in a small square container such as Ziploc disposable containers for soups, microwave it, slice into two slices in between, and then toast the bread! That is a nice way to get your crunch on. Try adding a slice of cheese in the middle of the toast with a slice of tomato and a sprinkle of basil. Nuke it a little until the cheese melts. Grilled Cheese Tomato Sandwich (subtract from your lean and green)! Or have you ever tried making cinnamon toast by spreading 1 tbsp light margarine or spraying ICBINB spray and sprinkling a little cinnamon  and splenda over the toast. So many things to do with the pancakes. Give one of the ideas a shot!

Pancake Muffins or Bread

Ingredients:
1 Pancake mix (1 Meal)
1/4 cup water

Directions:
Combine pancake mix and water in a shaker jar. Shake well until combined. Pour mixture into a glass mug sprayed with Pam that is the same shape all around. Or pour into a small square container for bread. Microwave for 1 1/2 minutes. Pour out of glass or container and slice in half.
