Shredded BBQ Beef and Cheddar Pizza

The shredded beef is a simple recipe you can prepare ahead of time and use as a main dish, or for salads, wraps, or pizza! The beef is slow cooked in root beer so that it has a subtle sweetness. Then mixed with sugar free bbq sauce.

Top it on a Cali'flour Foods cauliflower crust and add shredded cheddar cheese and you have a delicious pizza waiting for you! You could also use pork instead of beef!

Cali'flour Pizza Crusts

Shredded BBQ Beef and Cheddar Pizza

5 ounces cooked shredded beef (1 Lean)

1/2 cup 2% sharp cheddar cheese (1/2 Lean)
1 Cali'flour Foods crust (1/2 Lean, 3 Greens)

To make Shredded Beef:
Place a chuck roast in the slow cooker. Season with spices of your choice if desired, but subtract from your condiments. Add 1 cup diet root beer. Cook on LOW for 8 hours. 
Drain the beef and shred. Measure out 5 ounces of cooked beef and add 3 tbsp of G Hughes Sugar Free BBQ Sauce and set aside.

Bake crust for 8 to 10 minutes at 375 degrees. Let cool completely for 10 min. Add 5 ounces shredded BBQ beef. Sprinkle 1/2 cup shredded sharp cheddar cheese on top. Bake for about 5 more minutes or until cheese has melted. Garnish with cilantro if desired.

2 Servings with 1 Lean, 1 1/2 Greens, and 1.5 Condiments per serving (You will need to add 1 1/2 Greens)

Want to have the whole pizza?
Add only 1/4 cup 2% sharp cheddar cheese (1/4 Lean) and 1.25 ounce cooked shredded beef (1/4 Lean) with 2 tbsp sugar free bbq sauce (2 Condiments) to the crust (1/2 Lean, 3 Greens)!
