I became part of a challenge to lose 50 lbs that began yesterday on face book. I don't exactly have 50 lbs (46 lbs to be exact) to lose, but Jalita Reeder was so kind to let me join :) You gotta love those challenges to help keep you motivated and I need all the motivation I can get! Let's see how I do. I think I will do pretty darn good if you ask me. From now on I will be weighing in on Wednesdays. I will let you know how I do next Wednesday! I wasn't sure if I wanted to share my before photos with you guys until I lost some weight first. Yeah, I think I'll wait :) It will be a surprise!
This recipe is from the little pamphlet with recipes that comes with the medifast gravy mix and fajita seasoning mix.The original recipe states to use only the brown gravy mix with no other additional seasonings (with water) so I decided to add more flavor to it. I cut the amount of gravy mix by 1/3 so I could add 2 additional condiments which was the lite soy sauce. I marinated the steak in 1 tbsp of lite soy sauce overnight and also added 2 tsp of lite soy sauce to the brown gravy mixture. It sure did help! I would love to add more spices such as garlic, ginger, red pepper flakes, teriyaki sauce and even more soy sauce, but the condiments allowed are limited to 3 and I already reached my max. (Shhh! I did sprinkle in 1/8 tsp of cayenne pepper to give it some heat, but don't tell anyone). With the added soy sauce, I would definitely make this again. Don't get me wrong, the brown gravy mix would taste wonderful on mashed cauliflower as is, but for a stir fry, I just expected more. Another recipe worth trying guys!
Beef and Broccoli Stir Fry with MF Gravy Mix
15 oz flank or boneless sirloin steak, cut into strips (2 Leans)
1 tbsp lite soy sauce (1.5 Condiments)
1/4 cup water
7 grams (a little less than half) Medifast brown gravy mix (4 Condiments)
2 tsp lite soy sauce (1 Condiment)
1 cup broccoli florets (2 Greens)
1/2 cup green bell peppers, sliced (1 Green)
1/2 cup red bell peppers, sliced (1 Green)
1 cup grated cooked cauliflower (2 Greens)
2 tsp canola oil
Marinate steak with 1 tbsp lite soy sauce for at least 4 hours or overnight.
Combine gravy mix, soy sauce and water in a small bowl. Set aside.
Heat oil in large skillet on medium-high heat. Add steak; cook and stir 3 to 4 minutes or until desired doneness. Do not over cook.
Stir in broccoli, peppers, and gravy mixture. Bring to a boil. Reduce heat to low; cover and simmer 5 to 8 minutes or until broccoli is tender crisp. Serve.
2 Servings with 1 Lean, 3 Condiments and 3 Greens per Serving
