I absolutely love the Honey Balsamic Chicken from Macaroni Grill and this tastes very similar to it. The best part about this recipe is that it is a Weight Watchers recipe which means it is low in calories and fat! It doesn't skimp on flavor either. The chicken at the Macaroni Grill is served with angel hair pasta, but I ate the chicken with spaghetti squash, which is a great substitute for pasta. I mixed the spaghetti squash with a little bit of light butter and minced fresh garlic. Then I sprinkled a little bit of parmesan cheese and dried basil on top. It was a great Italian dish without all the carbs, calories, and fat. Yum!
Chicken Breast with Honey Balsamic Glaze
From Weight Watchers 2004 Annual Recipes for Success
1/2 tsp salt
1/4 tsp pepper
1 tsp olive oil
4 (4 oz) boneless, skinless chicken breast halves
2 tbsp balsamic vinegar
2 tbsp honey
Sprinkle chicken on both sides with salt and pepper or your favorite seasonings. I used garlic salt and pepper.
Heat oil in a large nonstick skillet over medium high heat. Add chicken; cook 7 to 8 minutes on each side or until chicken is done.
Transfer chicken to a platter; keep warm. Reduce heat to medium low; add vinegar and honey to pan. Simmer 1 minute or until glaze thickens; stirring constantly. Pour glaze over chicken.
