Italian Breaded Pork Chops and Garlic Mashed Potatoes

This is one of my favorite pork chop recipes. I had gotten it from where I get a lot of my "go to" recipes. The person who submitted the recipe was Sicilian and she said the recipe was in her family for 3 generations! Now I know why! It is delicious!  I served it with white gravy and my favorite garlic mashed potato recipe from a Southern Living Cook book. I cheated on the gravy and used a store bought white gravy mix. Nothing like homemade comfort food! Enjoy!

Italian Breaded Pork Chops

2 eggs, lightly beaten
2 tablespoons milk
3/4 cup Italian seasoned bread crumbs
1/4 cup grated Parmesan cheese
2 tablespoons dried parsley
2 tablespoons olive oil
4 cloves garlic, peeled and chopped
4 pork chops

Preheat oven to 325 degrees F (165 degrees C).
In a small bowl, beat together the eggs and milk. In a separate small bowl, mix the bread crumbs, Parmesan cheese, and parsley. Heat the olive oil in a large, oven-proof skillet over medium heat. Stir in the garlic, and cook until lightly browned. Remove garlic, reserving for other uses.

Dip each pork chop into the egg mixture, then into the bread crumb mixture, coating evenly. Place coated pork chops in the skillet, and brown abut 5 minutes on each side. Place the skillet and pork chops in the preheated oven, and cook 25 minutes, or to an internal temperature of 160 degrees F (70 degrees C). 4 Servings

Garlic Mashed Potatoes
From Southern Living Annual Recipes 1992
4 medium baking potatoes, peeled and cut into eighths (about 1 1/2 pounds)
1/3 to 1/2 cup milk
3 tbsp butter
4 to 6 cloves garlic, crushed
3/4 tsp salt
1/4 tsp pepper
Cook potatoes in boiling water to cover, 15 minutes or until tender; drain and mash. Melt butter in a small skillet. add 4 to 6 cloves garlic, crushed and cook over medium heat, stirring constantly, 1 minute or until browned. Stir in milk and remaining ingredients. Serve immediately. 4 servings
