I wanted to re-create a favorite dish of mine that I use to make before doing Medifast. It was one of my favorite comfort food meals as well as a favorite of my husband's. It was called Chicken and Broccoli Swiss Bake. Oh my goodness, it was so yummy! Probably because it had almost a stick of butter in it. Kinda reminds me of Paula Dean's saying. "Everything tastes better with a stick of butter!". Ha, ha! Definitely not good for you, unless you want clogged arteries, but oh soooo delicious! As I was analyzing the ingredients in the old recipe, I saw almost everything was allowable in the Medifast plan or had a substitution. I was one happy lady! I am not sure if any of you guys figured out the use of cream of chicken or cream of broccoli soup in your recipes but they are wonderful substitutions if you need a substitution for the original soups. I have to say that this dish is going right up there as one of my favorite lean and green meals to have. Sooooo delicious!
If you are concerned about having a Medifast meal in your lean and green because you are eating only 5 times a day instead of 6. Not to worry. What I do is split the meal in half so that I have one half earlier in the day and the other half later. You will still have 6 meals for the day and keep your metabolism running. This recipe makes 2 servings so divide it into 4 equal portions over the course of 2 days. The photo below is actually 1/4 of a meal. Also, you can use any spices you like. I used rotisserie because that is my favorite on grilled chicken and 3/4 tsp is less than 1 gram of carbs so that would be 1 condiment. You get alot of seasoning for 1 condiment. I only needed a 1/2 tsp. I used Mrs. Dash Garlic and Herb seasoning for the cream of chicken soup because it really goes well with it. Also, keep in mind that you can use any cheese you prefer from Swiss, Italian, Mexican, Mozzarella and Cheddar. Try Mexican Three Cheese Blend with chili cheese puffs for a little more spice. Chicken and Broccoli Casserole
3 cups broccoli florets, cooked (6 Greens)
9 oz raw chicken breasts - yield 6 oz cooked (1 Lean)
1/2 tsp McCormick Perfect Pinch Rotisserie Chicken Seasoning or seasoning of choice (1 Condiment)
1 packet cream of chicken or cream of broccoli soup (1 Meal)
3/4 cup water
1/4 tsp Mrs. Dash Garlic and herb Seasoning (1 Condiment)
1 cup or 4 oz 2% reduced fat Sargento Italian Blend Cheese 3-6 grams fat/oz (1 Lean)
1 bag Parmesan Cheese Puffs (1 Meal)
2 tbsp light butter, melted (2 Healthy Fats)
Season chicken with rotisserie chicken seasoning and rub it into the meat (1/4 tsp on each side) or your seasoning of choice. Grill, bake or broil chicken until cooked. Cube into 1 inch chunks and set aside.
Whisk cream soup of choice, water, and garlic and herb seasoning until blended in a medium bowl. Add broccoli, chicken and 1/2 cup cheese. Stir until blended. Spread into a casserole dish. You don't have to spray with cooking spray. Spread remaining cheese over the top. Bake at 350 degrees for 30 minutes.
Crush Parmesan cheese puffs until it resembles bread crumbs. Spread the crumbs over the top. Drizzle butter over the top. Bake an additional 10 minute.
2 Complete Lean and Green Meals with 1 Condiment, 1 Meal, and 1 Healthy Fat per Serving (This particular cheese doesn't require a healthy fat but chicken requires 1.)
