El Dente Macaroni and Cheese (Faux)

Mmmmmm who doesn't love macaroni and cheese? I know I do! So what to do when your on the medifast plan but try to find ways to recreate your favorite foods. I really don't think anything can replace the taste of good old fashioned mac and cheese, but for now it is off limits! This recipe doesn't really taste like mac and cheese at all. It actually tastes kind of chewy from all the cheese rather than creamy and gooey. I don't think I will make this again. I am going to keep searching for a tastier mac and cheese that has a creamier texture. I think it tastes more of egg beaters than of cheese. There is another mac and cheese recipe made with cottage cheese that I am hoping will satisfy my craving for something creamy and cheesy. I am not sure who first created this recipe, but thank you very much for sharing it on the recipe board.

El Dente Macaroni and Cheese (Faux)

4 ½ cup Cauliflower, broken down into small pinky tip size chunks (9 Greens)
Egg Beaters 2 cups (1 Lean)
8 oz Sargento reduced fat Mexican Cheese, shredded (2 Lean)

Preheat oven 350 degrees. Spray a 13 x 9 inch baking pan with non stick cooking spray. Combine ingredients and stir until well blended. Pour into prepared pan. Press the mixture down to make sure the cauliflower is submerged in the liquid so it will soften when cooked. Cover with foil and bake for 60 minutes. The egg beaters are pasteurized so it is done even if the center is a little gooey.

3 Servings with 1 Lean and 3 Greens per Serving
