Sweet and Spicy Chicken

I decided to start up Weight Watchers again today and it wasn't a surprise that I had gained 10 pounds in the past 3 weeks when I visited my parents in another town. 10 pounds is a lot in 3 weeks. I am actually quite shocked. I am almost back to the same weight I was when I first started Weight Watchers so I desperately need to get back in the ball game. Especially since Hubby will be trying to take leave for 2 weeks at the end of November which he is currently in Afghanistan. It would be a nice surprise for him to see me lighter than I am now. So today I began writing down everything I ate and tracking my points for the day. I even fit in an aerobics workout with some light weights. Hopefully I will stay motivated for the following days to come, but with recipes like this Sweet and Spicy Chicken, it makes it just a little bit easier... as long as I don't eat too much of it! Portion control, portion control!

I got this delicious recipe from Laura at Real Mom Kitchen. She has some wonderful recipes on her blog so head on over to her blog and check her out. This chicken came out soooo very good. It was extremely juicy and bursting with flavor. I took into account that Laura had said it wasn't too spicy so I decided to sprinkle some ground red pepper and about 1/8 teaspoon garlic powder into the mixture of spices. It came out perfect. I used my george foreman grill instead of grilling outside since it was raining. I am going to use the left overs for a salad tommorrow. I can't wait!

Sweet and Spicy Chicken

1 tablespoon brown sugar
1/2 tablespoon paprika
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon chili powder
4 (3 oz) boneless skinless chicken breast halves

Combine the first five ingredients; rub over chicken. Coat grill rack with cooking spray for grills or brush with olive oil before starting the grill. Grill chicken, covered, for 4-5 minutes on each side or until a meat thermometer reads 170°.
