Chicken and Broccoli Stuffing Bake

I love this dish. Classic delicious comfort food at its best. You can substitute the broccoli with any other vegetables of your choice such as peas and carrots. I just happen to have some broccoli on hand. Also, the swiss cheese gives this dish a wonderful flavor as well so don't skimp on the cheese! Enjoy this one dish meal!


Chicken and Broccoli Stuffing Bake


Ingredients:
4 boneless chicken breasts, cubed
2 (10 1/4 ounce) cans cream of chicken soup
10 ounces water or chicken broth
1 cup chopped frozen broccoli
4 slices low fat swiss cheese
1 (6 ounce) box seasoned stuffing mix (I use StoveTop)
4 teaspoons light butter

Directions:
Prepare stuffing mix as directed on the package using 4 teaspoons light butter and set aside.
Mix cream of chicken soup and broccoli with water.
Pour cream of mushroom mixture into 13x9x2 baking dish.
Lay cubed chicken breasts on top.
Add Swiss cheese on top of chicken breast.
Pour prepared stuffing mix over the top, covering it completely.
Bake covered at 350F for 1 hour.
