Broccoli Salad

This colorful dish is very yummy and is a definte crowd pleaser. The fresh broccoli is mixed with a sweet sauce enhanced by bacon, red onion, nuts and grapes. The best part about this recipe is that you can change out the ingredients any way you want. For instance, in place of cashews try using sunflower seeds, pecans, walnuts or any other nuts. For raisins, try using red grapes, craisins, or golden raisins. This would make a great salad to bring to a pot luck or summer barbeque which is just around the corner.


Broccoli Salad
(lighter version)

Ingredients:
2 heads fresh broccoli
1/4 cup red onion, chopped
10 slices turkey bacon
2 cups red seedless grapes
3/4 cup sliced almonds (I used cashews)
1 cup fat free mayonnaise
1/3 cup white sugar
3 tablespoons apple cider vinegar

Directions
Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, grapes, your favorite nuts and mix well.
To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill for atleast 2 hours and serve.
