Apple Cinnamon Oatmeal

Oatmeal has become my new found friend. I had my blood work done a few weeks ago and found out I had high cholesterol and my doctor recommended I eat oatmeal and cheerios for breakfast as well as a healthy diet and do a regular exercise routine. Well, this lead me to begin a hunt on various oatmeal recipes because I sure do not want to eat them plain, especially since I am no fan of oatmeal. This recipe was actually pretty good which is from a Taste of Home cook book called Healthy Cooking Annual recipes 2009. The apples and nuts made it more filling and actually quite tasty. I didn't have any almonds so I used some pecans I had stashed in the pantry. Not bad at all. I think I can handle eating oatmeal more often if I keep finding yummy recipes like these.

Apple Cinnamon Oatmeal
Taste of Home Healthy Cooking Annual Recipes 2009

3 cups water
2 medium tart apples, chopped
1-1/2 cups old-fashioned oats
Dash salt
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/4 cup chopped almonds
Maple syrup and/or fat-free milk, optional

In a large saucepan over medium heat, bring water to a boil. Add the apples, oats and salt; cook and stir for 5 minutes.
Remove from the heat; stir in the brown sugar, cinnamon and vanilla. Cover and let stand for 2 minutes. Sprinkle each serving with almonds. Serve with maple syrup and/or milk if desired.
