Sweet and Spicy Chicken

I found this recipe at On My Menu. She has a lot of wonderful recipes on her site. I especially liked this one because it only requires just a few ingredients that I usually have around the house. It has a nice sweet flavor, but it wasn't too spicy. Next time, I think I will use hot salsa rather than medium salsa or add some crushed red pepper. Overall, the dish was very yummy. With little preparation time and only 45 minute in the oven, it makes a wonderful weekday menu item. I will definitely be making this again.

Sweet and Spicy Chicken

8 boneless skinless chicken breasts
8 ounces apricot preserves
12 ounces salsa
1 pkg taco seasoning


Combine last three ingredients. Mix with chicken in 9 x 13 pan. Bake at 350 for 45 min. Serve with rice.
