Today I did get weighed in, but I gained again. I gained .4 pounds which you might say that isn't much but combined with last week I am almost over 3 pounds. I know that I haven't been doing what I am suppose to do to lose weight. I haven't been exercising and I haven't been watching what I eat. I just have not found the motivation since I got back from Colorado visiting my husband. It is all his fault! Just kidding! Not that I don't have things to motivate me. I do. I will be graduating this May from the University and I do want to look my best when I walk down that aisle and get my diploma. Or seeing my husband again in May which is such a very long time from now. I will only be able to see him for two months before he is off to Afghanistan in late July for 15 months! It would be a nice surprise for him to see me lose more pounds so that I can be close to the weight when we first met over 7 years ago. Not to mention so many other reasons for wanting to lose weight such as health, energy and self esteem. So you see... I have things I can shoot for, but I do not know why I haven't done it yet. Maybe I am just being lazy and making excuses. I guess we all go through this roller coaster with it's ups and downs. I am just waiting for my time to go down... to go down in pounds : )
I wanted to share this recipe with you guys. It is another crock pot recipe. You know how much I love my crock pot recipes. I am a big fan of pineapple and sausage so I thought I would give this a try. It is from the Taste of Home website and it was actually pretty tasty. I love Taste of Home simply because they have a lot of great recipes with ordinary ingredients that I would normally find in my kitchen. This had a wonderful taste and I would definitely try it with chicken. I served this with rice or just with broccoli if I wanted less points for the day. I used turkey sausage in the recipe and I didn't use any cornstarch. Instead of the chicken bouillon granules (which I did not have) and water, I substituted with 1/4 cup chicken broth. It turned out to be a very yummy dish. Enjoy!
Sweet and Sour Sausage
1 pound smoked turkey sausage, sliced
1 can (20 ounces) unsweetened pineapple chunks, undrained
1-1/2 cups fresh baby carrots, quartered lengthwise
1 large green pepper, cut into 1-inch pieces
1 medium onion, cut into chunks
1/3 cup packed brown sugar
1 tablespoon soy sauce
1/2 teaspoon chicken bouillon granules
1/4 teaspoon garlic powder
1/4 teaspoon ground ginger
2 tablespoons cornstarch
1/4 cup cold water
Hot cooked rice or chow mein noodles
In a 3-qt. slow cooker, combine the first 10 ingredients. Cover and cook on low for 4-5 hours.
Combine the cornstarch and water until smooth. Gradually stir into sausage mixture. Cover and cook on high for 30 minutes or until thickened. Serve with rice. Yield: 6 servings.
