It is weigh in day today and I am happy to say I lost 2.6 pounds this week, which brings me to a loss of 22 pounds. I honestly do not know how I lost the weight since I have not exercised for almost 3 weeks. I know I said I was going to start again last week, but with studying for final exams it just wasn't going to happen. Also, I haven't really been watching what I have been eating either. It is so funny how our bodies work. One week I would watch what I am eating and include exercise through out the week and I wouldn't lose anything. The next week I wouldn't exercise or watch my points and I lose a few pounds. Not that I am complaining that I lost this week. I am estatic! It is just that I didn't expect it. I guess it was a nice surprise.
This friday I am heading to Colorado to see my husband for a few weeks so I am not sure how much time I will have to post recipes, not to mention I won't really be doing much cooking anyways. I won't really have access to an oven anyways. Although, I may still post some pictures of my trip. I can't wait to spend the holidays with my hubby. I am so excited since this will be my first time seeing snow and my first time attempting to ski. It is a definite change from Florida where it is nice and warm today. I better invest in a good winter coat. Now for the recipe...
This is an easy recipe to make which only has 3 main ingredients. Season the chicken with any spices you like such as salt, pepper, garlic powder, paprika. I like my chicken seasoned well. Mix the honey and mustard, marinate it for a bit and then pop it in the oven. It is that simple. Try using chicken breast or grilling the meat instead of baking it. It still turns out great. Yummy and simple are my two favorite things when making a recipe. Also, another option that I have tried is putting four 3 ounce chicken breasts with the sauce in the slow cooker for about 6 to 8 hours on low. Shred the chicken and stir inside the crock pot. They make delicious sandwiches or wraps. Bon Appetit!
Honey Mustard Chicken Drumsticks
8 chicken drumsticks
1/2 cup honey
1/4 cup grey poupon dijon mustard
salt and pepper to taste
Sprinkle chicken with salt and pepper. Place in a roasting pan.
Combine mustard and honey. Pour over chicken, and marinate for 1 hour or overnight.
Bake in a preheated 350 degrees F (175 degrees C) oven for 1 hour, basting often.
Servings: 4 Points: 6 for 2 drumsticks or 3 ounce chicken breast
