Cumin Scented Sweet Potato Wedges

I am heading for Colorado in in a few hours to see my husband. Yay! I am so excited. But before I go, I wanted to post this recipe. I love sweet potatoes so I had to give this recipe a try from one of my many Weight Watchers cookbooks. I did like the recipe, but I think it had a tad bit too much pepper. It was very spicy. So if you don't like spicy foods, then this isn't for you. Next time I will just sprinkle the pepper on otherwise, it was a nice change for my sweet potatoe fries. Also, this recipe states to grill them, but I just baked them 10 minutes on each side at 425 degrees.

Cumin Scented Sweet Potato Wedges

2 large sweet potatoes (10 ounces each), peeled, each cut into 8 wedges
1 teaspoon ground cumin
1 teaspoon paprika
3/4 teaspoon salt
1/2 teaspoon black pepper

Spray the grill rack with nonstick spray. Preheat the grill to high or prepare a hot fire.
Put the sweet potatoe wedges in a large bowl and spray with olive oil nonstick spray; tos sto coat even;y. Combine the remaining ingredients in a cup; sprinkle evenly over the potatoes. Toss to coat.
Arrange the potatoes, cut side down, on the grill rack and grill until tender and crispy in spots, about 7 minutes on each cut side.
