Citrus Marinade for Chicken

I am back! I have been missing in action since my husband was only here for a week and a half so I was trying to spend as much time with him as possible. He left this morning and I already miss him. I have to say that I wasn't following my diet plan very well while he was here so I am back on track today. I am afraid to go to my weigh in on Wednesday for fear I have gained a few pounds. Oh well, we both had fun while he was here and I guess that is all that matters. Also, the good news is that my weigh in is before Thanksgiving. That really helps out a lot so I can enjoy all the great food my family and I will be having!
I made this chicken while my husband was in town and he absolutely loved the flavor. I marinated the chicken for 6 hours and then he grilled them. They tasted very yummy.


Citrus Marinade
Weight Watchers New Complete Cookbook

Ingredients:
1/3 cup fresh orange juice
2 tablespoons chopped fresh flat leaf parsley
2 tablespoons lemon or lime juice
1 tablespoon extra virgin olive oil
1 teaspoon dried thyme leaves
1 garlic clove minced
1/4 teaspoon freshly ground pepper

Directions:
In a small jar with a tight fitting lid, combine all the ingredients; cover and shake well. Use at once or cover and refrigerate up to 5 days.
