Alfredo Pizza

I have never had alfredo pizza before but it was pretty good. This was another one of those recipes I have seen floating around the Weight Watchers recipe board as a must try. They are 5 points per slice but it was pretty filling with all the spinach and tomatoes. Although, I did have two slices for dinner. Yum! Yum! The only thing I noticed was my pizza crust needed to be cooked atleast 25 minutes and the recipe stated only 10-15 minutes so I precooked the pizza crust for 10 minutes, added the toppings, and cooked it for 15 more minutes.

Alfredo Pizza

1 Refrigerated pizza crust
1 cup cleaned, dried & chopped fresh spinach
2 Ripe roma tomatoes, chopped or sliced
1 onion chopped
1 Tablespoon flour
1 cup Skim Milk
1/4 cup grated Parmesan cheese
2 cups grated 2% Mozzarella cheese
Salt & Pepper

*Prepare the vegetables as directed.
Preheat oven to 450* On pizza stone or non-stick pan, lay out pizza dough (I sprayed with non fat Pam first) Make a circle and pinch edges to form an edge around the crust. In large saucepan combine flour and 2 Tlbsp of the milk until combined. Add remainder of milk, onion, salt and pepper. Cook over medium heat until thick and bubbly, stirring often. Remove from heat and add spinach and Parmesan cheese and stir until spinach is moist and somewhat wilted. Pour mixture evenly on the crust. Top w/tomatoes and then the Mozzarella. Bake until golden brown (about 10-15 minutes).
