This dish is similiar to a creme brulee in the sense that it has that hard candy topping with sweet creamy potatoes. I added the splenda to the sweet potato mixture because I wanted it sweeter. I only made half the recipe, since 14 servings is a bit much for just me. Not that I mind leftovers, but even 7 servings is a lot for me. Enjoy the recipe for only 2 points if you use the fat free and light ingredients!
Bruleed Mashed Sweet Potatoes
Slightly adapted from Cooking Light Annual Recipes 2002
6 cups hot mashed sweet potatoes (about 4 pounds)
3/4 cup fat free milk
3 tablespoons light butter, softened
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 packets splenda (optional)
1/2 cup packed brown sugar
Combine first 7 ingredients in a bowl. Spoon potato mixture into an 11 x 7-inch baking dish coated with cooking spray. Sprinkle 1/2 cup brown sugar evenly over top. Broil 2 minutes or until sugar melts. Let stand until melted sugar hardens (about 5 minutes).
