Bacon Cheddar Mashed Potatoes

This is a pretty simple recipe to make from the Weight Watchers Comfort Classics Cook book. I will say it was just okay, but nothing to get excited about. Some people enjoyed this recipe from the Weight Watchers recipe review board which is why I wanted to try it. I have to say, I did enjoy eating it with the meatloaf muffins (yum yum) but not so much all by itself. To me, it reminded me of a loaded baked potato without the butter. Oh how I love the butter. That's the best part! The sour cream was the strongest flavor I tasted which I guess isn't bad if you like sour cream. Overall, I would make it again but I will also keep searching for a mashed potato recipe that will be more than just "okay".


Bacon Cheddar Mashed Potatoes
Weight Watchers Comfort Classics

Ingredients:
1 ½ pounds russet potatoes, peeled and cut into 1 inch pieces
½ cup fat free sour cream
2 tablespoons fat free milk
1/8 teaspoon salt
1/8 teaspoon black pepper
1/3 cup shredded low fat sharp cheddar
2 slices center cut bacon, crisp cooked and coarsely crumbled
1 scallion, thinly sliced (used chives)

Directions:
Place the potatoes in a medium saucepan with enough water to cover by 3 inches; bring to a boil. Reduce the heat and simmer until fork tender, 20 to 25 minutes. Drain and return to the saucepan.
Add the sour cream, milk, salt, and pepper; mash with a potato masher until the potatoes become creamy. Stir in the cheddar. Sprinkle with the bacon and scallion.

Servings: 4 (about ½ cup) Points: 3 Calories 194 Fat: 2g Fiber: 3g
