Firecracker Shrimp

I have been meaning to make this recipe for awhile now from Tried and True Cooking with Heidi. Heidi has so many fast, easy and delicious recipes featured on her blog. I always check out her blog regularly. Check it out sometime! I finally got around to trying this recipe today and it was delicious. I can't believe the great flavor from only a few ingredients. I calculated the points for it and it only came out to 3 points! Yay! I didn't even realize it was Weight Watchers friendly. I ended up broiling the shrimp since for some reason the grill didn't want to work for me today and they still turned out very yummy. My only change was using olive oil in place of canola oil. Enjoy!

Firecracker Shrimp

1/2 cup apricot preserves
1 teaspoon canola oil
1 teaspoon soy sauce
1/2 teaspoon crushed red pepper flakes
1 pound uncooked large shrimp, peeled and deveined

In a small bowl, combine the apricot preserves, oil, soy sauce and pepper flakes. Thread shrimp onto metal or soaked wooden skewers. Grill, uncovered, over medium heat or broil 4 in. from the heat for 2-3 minutes on each side or until shrimp turn pink, basting frequently with apricot mixture.
