Cinnamon French Toast

Here is another breakfast treat revamped with fewer calories and less fat. I love french toast especially with a ton of maple syrup. Mmmmmm delicious! Using full fat products can really add alot of unwanted calories so just by substituting with fat free or low fat ingredients really helps in lowering your overall calorie intake. This recipe is pretty good. I still top it with my sugar free maple syrup. They don't require much time to make, especially when we don't have much time in the morning to begin with. This is definitely a keeper.
Also, I had my weigh in today and I am happy to report that I have lost 4.2 lbs! Yes, I am excited. Two weeks on Weight Watchers and I have lost over 7 lbs. I know I can't expect a big loss each week but I am happy if I even lose 1 pound a week because it is 1 pound less towards my goal weight. I really don't think I will lose too much this week considering I have a birthday tomorrow. With going out to dinner and then there is cake.... yes I have to cake for my birthday : ) Preferably chocolate cake. I hope that I can stick with the plan this week. I will let you know how it goes next Weigh in Wednesday!

Cinnamon French Toast

3 slices light bread (40 to 45 caloriwith about 2 g fiber per slice)
1/2 cup fat free liquid egg substitute
1/2 teaspoon cinnamon, divided
1/4 teaspoon vanilla extract
1 Splenda packet

Combine egg substitute with vanilla extract and half of the cinnamon (1/4 teaspoon). Use the egg mixture as an egg wash, and dip your bread into it.
Cook bread over medium heat in a pan sprayed with nonstick spray, flipping after a few minutes. Once both sides are brown, plate 'em, and sprinkle with sweetner and the remaining 1/4 teaspoon of cinnamon.
