Before I go on about the Chocolate Cheesecake Nuggets... I confess... I cheated! Yes, I did. I gave in to my craving of General Tso's Chicken at a local Chinese Restaurant. You see, Chinese food is one of my weaknesses besides chocolate. Yikes! I think I need to find a Weight Watchers friendly recipe for General Tso's Chicken or something close to it. Well, we all have our cheat days and today was definitely mine. I just have to get back on track. Now on to the yummy frozen nuggets.
I know these don't look that extravagant, but for 1 point for two nuggets, I had to give them a try. They tasted good, but for 1 point I think I much rather have the Weight Watchers big fudge ice cream bars or the cookies and cream ice cream bars for 2 points. They are great for that sweet chocolate fix. I always have one of their ice cream bars at night when I most crave something sweet. Tonight, these little nuggets will be my bedtime snack. I added sugar free caramel as a garnish. It went very well with the chocolate cheesecake flavor.
Chilly Chocolate Cheesecake Nuggets
3/4 cup Cool Whip Fat Free
1/4 cup plus 1 tablespoon fat free cream cheese, softened
One 25 - calorie diet hot cocoa mix
1 tablespoon sugar free chocolate syrup
1 tablespoon Splenda
Using a fork or an electric mixer, vigorously mix Cool Whip, cream cheese, cocoa mix, syrup and Splenda until smooth and well blended.
Evenly distribute mixture into 10 sections of an ice cube tray. Place tray in freezer until nuggets are solid (at least 2 hours).
Once froze, nuggets should pop out easily. (If not, run the bottom of the tray under the faucet for a few seconds to loosen them.)
