Broccoli Cheese Soup

Oh my gosh... this recipe is sooooo good with such little ingredients. It is so easy to prepare. It kind of reminds me of a nacho cheese soup rather than plain old broccoli cheese soup. Don't get me wrong. There is nothing bad about plain broccoli cheese soup but this soup adds a little variety to the soup mix if you are craving something cheesy and spicy. I actually made a large batch and froze individual servings in ziploc baggies as I do all my soups. They are perfect for a quick snack or lunch for only 2 points! Just add a salad, some crusty bread or a small sandwich and you are good to go! I had it for lunch today with a ham and swiss sandwich on wheat. My total tally for lunch was only 5 points!


Broccoli Cheese Soup

Ingredients:
3 (14 1/2 ounce) cans chicken broth
2 (1 lb) bags frozen broccoli
1 (10 1/2 ounce) can rotel brand tomatoes and green chilies
10 ounces Velveeta reduced fat cheese product

Directions:
Mix chicken broth, frozen broccoli and tomatoes and chilies together.
Simmer for 25 minutes or until veggies are tender.
Cube Velveeta and put into soup pot.
Simmer just until cheese is melted.
