Chicken Caesar Pasta Salad

This is one of the easiest dishes to make that is a definite crowd pleaser. The best part is that you could vary the ingredients to your liking by adding more vegetables, cheeses, meats, etc. The peas, carrots and cucumbers is just what I had on hand. I marinated the chicken breasts in caesar dressing before grilling it so that the chicken had more flavor. It came out to be a quick and easy meal for dinner.

Chicken Caesar Pasta Salad

3 cups cooked, shredded skinless chicken breasts (about 12 ounces)
3 cups cooked bowtie pasta (about 6 ounces uncooked pasta)
1 cucumber diced
1 cup frozen peas and carrots, cooked and drained
1/2 cup thinly sliced fresh basil
1/3 cup fat-free caesar salad dressing, or more if desired
1/4 cup chopped fresh parsley
1 (4 ounce) package crumbled feta cheese
1/2 cup grated parmesan cheese
1 garlic clove, minced

Combine all ingredients in a large bowl; toss well to coat.
