I have the entire collection of Southern Living Annual Recipe Books thanks to my dear old dad. He started collecting them since 1979 when the series first started so I have found a lot of great recipes in those books. I know this is a simple known recipe and sooooo very fattening at that but I love to have it maybe once a month so it doesn't completely clog my arteries with all that bacon fat. Of course the bacon fat is what makes it so delicious. I am sure there is a way to make it less fattening by not putting the bacon fat but then it just wouldn't be the same now would it. Enjoy!


Hash Brown Potatoes
Published in Southern Living Annual Recipes 1981

Ingredients:
1/4 cup bacon drippings
2 tablespoons butter
4 cups diced cooked potatoes
2/3 cup minced onion
2 tablespoons minced fresh parsley
2 cloves garlic, minced
Salt and Pepper to taste

Directions:
Melt bacon drippings and butter in a 9 inch skillet. Add remaining ingredients, stirring gently until coated. Cook mixture, uncovered, turning occassionally until browned on all sides (about 20 minutes). Yield 4 servings
