This recipe tastes very similar to one of Macaroni Grill's known dishes. Sinfully delicious.
Carmela's Chicken Rigatoni (Macaroni Grill Copy Cat Recipe)
4 ounce butter flavored oil (I used 2 tablespoons butter and 1/4 cup olive oil)
6 ounces mushrooms
4 chicken breasts, cooked and chopped
salt and pepper
2 teaspoons basil
4 ounces dry marsala
14 ounces heavy cream
16 ounces rigatoni pasta (pre cooked)
2 ounces grated parmesan cheese
Caramelized onion (recipe below)
To make caramelized onions:
2 tablespoons butter
1 tablespoons extra-virgin olive oil
1 onions, sliced thinly
salt, to taste
pepper, to taste
1 teaspoon sugar
Over medium heat, melt the butter in a medium skillet. Add the olive oil and continue heating until incorporated.
Add each salt and pepper and onions, stirring constantly, cooking until onions start to soften (about 5 minutes).
Mix in the sugar and continue cooking until onions are golden brown, frequently scraping the browning bits off the bottom of the pan (approximately 20 minutes).
In a hot sauté pan add butter, olive oil, mushrooms, chicken, basil, caramelized onions, salt and pepper and sauté for approximately 60 to 90 seconds.
Add the wine and sauté for 60 seconds. Add the heavy cream and bring to a boil over high heat. Dip pre-cooked pasta in boiling water for 10 seconds, drain thoroughly.
Put pasta in sauté pan and sauté until sauce coats the pasta. Toss briefly over fire, add parmesan cheese and continue to toss until cheese is completely incorporated.
Transfer to plate, garnish with parsley.
