Amish Meatloaf

This is a new favorite of mine simply because I love the sweet and savory flavors. Some choose to omit the brown sugar that is in the meat mixture because they think it is too sweet but I do not think it is sweet at all. I halved the mixture since I was only cooking for my husband and I. I put in 2 tablespoons of brown sugar and only 1/2 cup of ketchup into the meat mixture while halving the rest of the ingredients. Turned out very moist and was a change from using the traditional breadcrumbs.

Bacon slices on top. I put the meat mixture in a 9" cake pan since I only had 1 lb of meat. Worked out fine.

Amish Meatloaf

2 lbs lean ground beef
2 cups ritz crackers, crushed
1 small onion chopped finely
2 eggs, slightly beaten
3/4 cup ketchup
1/4 cup brown sugar
1/4 to 1/2 teaspoon pepper
2 slices of bacon
1/2 cup ketchup
1/4 teaspoon salt
1 tablespoon prepared mustard
2 tablespoon dark brown sugar
1/8 - 1/4 teaspoon pepper

Mix first 8 ingredients throughly together and pack into a loaf pan.
Next put the strips of bacon on top and bake for an hour at 350F degrees.
While waiting, mix the sauce ingredients together.
After the hour is up, pour and smooth the sauce onto the meatloaf and cook another 15 to 20 minutes.
